Vine training: low espalier with Guyot pruning and spurred cordon

Maximum yield in grapes: 9.5 tons/ha
Maximum yield in wine: 70%
Vinification: soft pressing of the grapes to extract only the best from them. Fermentation at a controlled temperature of 12-14°C to keep the wealth of varietal aromas intact.
Malolactic fermentation: none.
Aging: in steel for 3-4 months, followed by bottling in the spring after the vintage.
Alcohol (minimum): 10.5% vol.
Total acidity (minimum): 5 g/L
Net dry extract (minimum): 15 g/L
Serving temperature: 8-10°C
Storage: Gavi is a fresh wine, best drunk young.
Food/wine pairings: low-fat hors d’oeuvres, starters with fish- based sauces and high-end fish dishes. Excellent with shellfish.
